Sometimes I’ll crave a burger. It’s not often, nor is it made from a cow like you’re probably imaging right now, but every now and then I’ll get a hankering for a veggie burger. I’ve ordered countless veggie burgers at restaurants and I’ve tasted so many versions that I decided to come up with my own!
I don’t know if it’s because I like mine made with extra veggies or if it’s the fact that I know exactly what I’m putting in my burgers, but must say, the ones I created have become my favorite. Even out-winning Cheesecake Factory’s version!
What you need:
- 1 can of black beans
- Carrots, corn, onion, and sweet peppers. (You can use as many or as little veggies as you’d like. I typically use whatever I have on hand and a lot of it.)
- 1 egg
- 1/2 cup bread crumbs
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. onion powder
- 1 tsp. Adobo
Directions:
- Drain and rinse black beans and mush with a fork until desired consistency (I typically like to leave a few beans whole, but that’s just me.)
- Add egg, bread crumbs (I use gluten-free), salt, pepper, Adobo and onion powder
- Mix well
- Chop up vegetables and mix again!
Your results should look something like this!
Make sure you preheat your pan with olive oil before placing the patty into the pan.
I cook each side about 7-10 minutes but as you can see, I like mine to be a little extra crispy with softer veggies.
Added some mayo, lettuce, tomatoes, and pickled jalapenos to my gluten-free bun and ta-da! YUMMY!
I made these for 4th of July and people were definitely eager to take a bite of my healthy burger.
