This past Wednesday was my husband’s birthday! I was dying to get the party started earlier, so the night before he turned 32 I decided to try something that had popped up on my Facebook news feed. A microwavable cupcake! Let me tell you something, baking is not my specialty. It takes too long, I feel like it’s a lot of work, I hardly can eat any of it and using measuring cups and spoons are not something I particularly enjoy doing. Although, I have recently started to take a liking to it as I am finding it to be a fantastic stress reducer.
We’ve had a terrible week (I’m talking miserable) so I wanted to surprise him with a little something before his birthday came along as a means of cheering him up. I found this recipe on Buzzfeed. It seemed simple enough. A few ingredients, mix them together and would be ready within five minutes.
The Recipe
- 2 tbsp. melted butter
- 1 large egg
- 2 tbsp. milk
- 1 tsp. pure vanilla extract
- 1/4 cup sugar
- 6 tbsp. flour
- A pinch of salt and SPRINKLES!
Microwave ingredients for about one minute and you’re golden!
The only complaint we had is that it looks done after one minute, but don’t be fooled! Just because the top looks cooked doesn’t mean that the bottom is cooked. I made a boo boo and added the icing to the top of the cupcake only to find out later that the bottom was still mushy. I had to pop it back in the microwave for another minute. Also, word to the wise, wait for the mug to cool down before adding icing otherwise it’ll turn to mush. I should have known that.
Overall it was tasty! Just avoid our mistakes and you’re sure to have a yummy treat that can be whipped up in a jiffy. You can find the video of this recipe here!
